A teppanyaki hob – also known as a teppanyaki grill – is a continuous smooth stainless steel plate that is heated directly. The heat distribution of the grill plate can be regulated precisely. This allows the teppanyaki grill plate to cook food with pinpoint accuracy without open flames. The technique originated in Japanese cuisine. It is also becoming an increasingly integral part of innovative cooking in European cuisine.

Teppanyaki comes from Japanese cuisine. The smooth griddle reaches temperatures of up to 250 degrees Celsius and requires little fat. Plancha has its origins in Spain and Latin American cuisine. The ribbed griddle reaches temperatures of up to 300 degrees Celsius and requires significantly more fat to fry the food easily. The higher temperatures create an intense crust and give the food a slightly smoky flavour.
